When we were in Disney the Ghirardelli Chocolate store in California Adventure was passing out Peppermint Bark Chocolate Squares, YUM! They were so good! I was trying to decide what I could make with it for a yummy Christmas treat and I decided to make the S'more Cookies into Peppermint S'more cookies and changed it up a bit by using Chocolate Graham Crackers!
Here's what you'll need:
1/2 cup Butter
1/4 cup Brown Sugar
1/2 cup Sugar
1 Egg
1tsp Vanilla
1 1/3 cup Flour
3/4cup Chocolate Graham Cracker Crumbs (I used Teddy Graham's because I couldn't find the graham crackers)
1tsp Baking Soda
1/4 tsp Salt
2 large Peppermint Bark Chocolate bars
1 1/2 cups Marshmallow Fluff
Here's how you make it:
Preheat oven to 350°F. Grease a 8inch square baking pan. In a large bowl, cream together butter and sugar until light. Beat in egg and vanilla. In a small bowl, whisk together flour, graham cracker crumbs, baking powder and salt. Add to butter mixture and mix at a low speed until combined. Divide dough in half and press half of dough into an even layer on the bottom of the prepared pan. Place chocolate bars over dough. The 2 bars should fit perfectly side by side, but break the chocolate (if necessary) to get it to fit in a single layer. Spread chocolate with marshmallow cream. Place remaining dough in a single layer on top of the fluff (most easily achieved by flattening the dough into small squares and laying them together).Bake for 30 to 35 minutes, until lightly browned. Cool completely before cutting into bars
