Easy Boston Cream Pie





Finally I’m getting back to doing my blog thing! I really was planning on being back weeks ago, but my plans got derailed a little. And then school started and I wasn’t ready for that! I mean really getting up at 6am is not my thing! I’m a morning person but this is testing me! I have so much “free” time now while Man-Child is at school from 7:20 until 5:30 when football is over! It’s a little crazy to me! I’ve actually had a hard time getting back into my groove. But I feel like I’m getting back in the swing of things.


I made this dessert for my Mom in California for her birthday this summer, it was a big hit with everyone and was so simple I knew I had to make it again and share it with you. Originally I had planned to make this as a We survived the first week of school but that didn’t happen, it ended up being just a middle of the week, random cake! And I'm completely fine with that!

Ingredients:

1 Pound Cake
1 pkg Vanilla Pudding (prepared according to the directions for Pie)
1 tub cool whip
1 cup Chocolate Chips


Directions:

Thaw the pound cake and slice in half length wise, Make the pudding according to the package directions for PIE and let chill until set up. Meanwhile take the tub of cool whip and microwave for 30 sec, take out and stir in the chocolate chips, return to the microwave for 30 sec, remove and stir, continue to do that until the chocolate chips are melted. Let cool for a few minutes.


Spread the pudding over the bottom layer of cake, place the top of the cake onto the pudding. Pour the Chocolate Ganache over the top of the cake, chill until ready to serve.
