I had never attempted lemon bars
until about 6 months ago. I made them for an FRG (Family Readiness Group) meeting.
Everyone loved them in fact one friend loved them so much she asked for the
recipe and for me to make them again for our next function! I think they are great too and always love a
lemon dessert. I think it’s my 2nd favorite, next to CHOCOLATE of
course! I had found this great recipe for the Best Lemon Bars EVAH on less cake more frosting and had to see if it was as good as it claimed to be. Well let me
just tell you UM YEAH THEY ARE! Try 'em you’ll like 'em!
Here’s what you’ll need:
Crust:
2 cups Flour
1/2 cup Powdered Sugar
1 cup softened Butter (no margarine)
Filling:
4 beaten eggs
2 cups Sugar
½ cup Lemon Juice
¼ cup Flour
1/2 tsp Baking Powder
Powdered Sugar for dusting the tops
Here’s how you make it:
Mix first 3 ingredients until a soft
dough forms. Press into greased 9×13 pan. It’s a really crumbly crust but comes
together when you are pressing it into the pan. Bake the crust @ 350 for 20
minutes. Watching to make sure it doesn’t get too brown. While the crust is
baking, mix together the filling. Pour all the filling ingredients into a bowl
and mix well. When the crust is done remove it from the oven and let cool about
15-20 minutes. Pour the filling over the cooled crust and Bake @ 350 for
another 25 minutes. Check it at 25 minutes it may need a little longer. You
want the filling to be set up not wiggly any longer. Remove from the oven and dust
the top with Powdered Sugar to finish. Let cool and slice into bars.
