Savory Breakfast Muffins


Weekday mornings are sometimes a struggle. Ok a lot of the times. I like Man-Child to eat a good breakfast but don’t always feel up to cooking! I try to make cereal a once a week kind of thing, so I am always looking for easy yet filling breakfast ideas. I think this one fits the bill! Plus any leftovers can be frozen and reheated!

Here’s what you’ll need:

2 cups self-rising flour

3/4 cup shredded cheese (I used a mix of cheddar)

2 tablespoons sugar

1 cup cooked and crumbled ground pork sausage

1 cup milk

1/4 cup vegetable oil

2       large eggs


 




 



Here’s how you make it:

Combine first 4 ingredients in a large bowl. Make a well in center of mixture. Whisk together milk, oil, and eggs until well blended. Add to flour mixture, and stir just until dry ingredients are moistened. Spoon mixture into lightly greased muffin pans, filling two-thirds full. Bake at 400° for 15 to 16 minutes or until golden brown.
