Easy Button: Corndog Muffins



While My Sister was up visiting this summer we made Corndog Muffins one afternoon for lunch. They were a huge hit with all the kiddos out of the 2 dozen we made I think we had 1 leftover! We were getting a little tired of sandwiches at this point! Last summer when they visited we ate ham and cheese sandwiches every day for lunch, ugh we were all so sick of sandwiches at the end of that trip! So we decided this year we were going to try and mix it up a little! We did have sandwiches a few times, but we also had Tortilla Roll ups and of course these yummy Corndog Muffins! Next summer we are hoping to do a road trip and I know we are going to have to get creative with the lunches on the road?!

Here’s what you’ll need:

Cornbread Mix (follow the directions on the package)

Hotdogs, cut up into 3rds (We made 2 dozen muffins and used one package of hotdogs)




Here’s how you make it:

Mix the Cornbread according to the package directions. Line a muffin pan with cupcake liners. Meanwhile preheat the oven to the specified setting on the package. Fill the cups about ½ way full with the batter. Then place a hotdog in the center of each. Bake for the specified time. Let cool slightly and 
serve!
